GENERAL INFORMATION:

Böcker Gluten Free Bakery Mixes are made with a variety of gluten free sourdoughs. The gluten free raw materials used allow the dough to be processed with a high dough yield. A variety of baked goods can be made with the different mixes. All mixes are 100% and can be used without milk and eggs in the recipe. For longer freshness and the best aroma.


AREAS OF APPLICATION:

It is important to note that the finished baked goods are only gluten free if there has been no contamination from flour powder containing gluten (rye, wheat, barley, spelt, green kernel, emmer, einkorn, Khorasan wheat and triticale). Suitable gluten free flours to use during the handling of doughs are, for example, rice flour or corn flour.

For tasty gluten free baguettes and rolls. The rolls have a mild, typical roll-dough taste. Suitable for light baked goods such as mini baguettes or fine baked goods.
