Hallo Böcker-Team,
Ich hab mir den Roggen und den Weizensauerteig zusenden lassen und einen eigenen Ansatz hergestellt, den ich jetzt beim Backen weiterverwende. Vom ursprünglichen Produkt ist noch einiges übrig. Kann ich das einfrieren?

Hallo Frau Schneehagen,
wird der eingefrorene Sauerteig nach dem Auftauen direkt in den Brotteig gegeben, ist ein Einfrieren denkbar. Allerdings ist dann ein Backen ohne Backhefe nicht mehr möglich. Soll der Sauerteig zum Ansetzten eines neuen Sauerteiges verwendet werden, ist das Einfrieren nicht zu empfehlen. Die dafür notwendigen Mikroorganismen würden den Prozess des Einfrierens nicht überstehen und somit nicht mehr aktiviert werden können, was für einen Sauerteig notwendig ist.
