Today, BÖCKER is led in the fourth generation by Dr. Georg Böcker, with the same passion for natural ingredients, precise sourdough fermentation, and innovative solutions for both artisan bakeries and industrial production.

It all began with a pioneer: Over 100 years ago, Ernst Böcker used his knowledge of sourdough and fermentation to establish our company in Minden – and to bring reliable sourdough processes to bakeries.
With the development of the pure-culture sourdough „BÖCKER Reinzucht-Sauerteig“, a natural starter, he enabled bakers to create their own sourdough that was stable and reproducible. This idea marked the beginning of a family tradition that continues to date.
His son, Ernst-Joachim Böcker, deepened the research into lactic acid bacteria and microbial cultures that define sourdough quality. His work also incorporated the traditional fermentation methods of northern German bread factories.
Today, the 5th generation is preparing to take on responsibility.
What unites all generations is their fascination for sourdough and their Vision of creating the best baked goods.
